Grape Varieties:
100% Pinotage
Wine Making Method and Maturation:
Harvesting occurred at optimal ripeness of 25.7° Balling. Picking was done by hand in the early morning to ensure that the grapes arrived cool at the cellar.
Cold soaking was done for 48 hours before inoculation. Extraction was done by means of punch-downs every 6 hours.
Fermentation lasted for 5 days and temperatures peaked at 26°C. Skins were pressed at 4° Balling and the gently pressed wine was blended with the free-run and allowed to complete fermentation before it was racked into barrels.Â
The wine underwent MLF in 300 litre French oak barrels of which 50% was new, 30% was 2nd fill and the rest 3rd fill and then matured for 20 months.
Only the 15 best barrels were chosen after a rigorous selection process to be bottled for this wine
Wine Tasting Notes:
On colour
Survivor Pinotage Reserve shows a deep ruby to purple colour, with a vivid, youthful rim that points to its relative freshness. The depth of colour suggests good concentration of fruit and moderate extraction.
On the nose
The nose is expressive and ripe, offering layers of black cherry, plum and mulberry alongside notes of redcurrant and raspberry. There are also hints of sweet spice, mocha and vanilla from oak, with a subtle smoky, roasted coffee and dried-herb edge typical of Pinotage.
On the palate
On the palate the wine is dry, full-bodied and generously fruited, with flavours of dark cherry, plum compote and wild berries supported by medium to medium plus acidity. The tannins are firm but rounded, framed by toasty oak, cocoa and a touch of spice, leading to a fairly long finish where dark fruit and gentle smokiness linger.
On the whole
A bold, dark-fruited Pinotage with smoky oak spice, firm yet rounded structure and a long, flavourful finish.Â
