Winemaking Method & Maturation:
Villion Blanc de l'Atlantique is crafted using a minimal intervention approach, rooted in environmentally friendly and traditional winemaking methods. The winemaker selects fruit from multiple wards, ensuring that each vineyard contributes specific characteristics to the blend, such as elevated aromatics, layered flavor, and structure. Grapes are hand-selected, and spontaneous fermentation with ambient yeast is favored, showcasing the authenticity and terroir of the region. Some components, like Chenin Blanc, undergo skin fermentation to lend extra texture, while the wine is aged in small French oak barrels for seven months to heighten perfume and complexity without overshadowing the fruit. The process is designed to preserve natural aromas, texture, and mineral freshness, with an emphasis on freshness and maritime influence from the Cape South Coast.
Tasting notes:
The wine is clear and pale lemon-gold in appearance, suggesting vibrancy and a youthful profile, likely reflecting both the predominant Viognier content and careful winemaking that focuses on freshness and preserved aromatics.
The nose is pronounced, offering pure stone-fruit aromas with ripe peach, apricot, and hints of tropical fruit like pawpaw. There is an aromatic lift of Turkish delight and floral perfume, supported by notes of spiced pear, clove, cinnamon, and a light touch of creamy oak and crushed stone.
On the palate, there is a mouth-watering entry with flavors echoing the nose: juicy stone fruits, subtle tropical tones, and sweet baking spice. The texture is medium to full-bodied, displaying a creamy mouthfeel and persistent, chalky minerality. Bright acidity ensures balance and length, leading to a harmonious finish that is both fresh and textured.

Meet the Winemaker: Kobie
Kobie Viljoen was educated at the Agricultural College of Elsenburg in Stellenbosch, Western Cape. He obtained a Diploma in CellarTechnology and distinguished himself as one of the top students in his class.
During the following 20 years, he attained valuable experience in top South African cellars.
Since opening his own venture, he leans on his 20 years of experience in winemaking and combines that with using hand selected fruit through the process to capture the essential components of colour, flavour and texture within his wines.
Kobie is particular about using environmental friendly and traditional methods of winemaking which includes spontaneous fermentation and open top fermentations as they add to the authenticity of the wines he makes.

Gentle yet intriguing entry with a focused red berry fruit core. Ripe raspberry and freshly pressed pomegranate aromas dominate. Enticing, bruised rooibos tealeaf nuances, sliced ginger and a touch of polished leather expand this elegant Pinot Noir. Lovely saline and wet stone notes reflect the wineβs spontaneous fermentation nature and maritime origin.
Broad, mouth filling entry with a fresh, red berry fruit acidity. Vibrant texture and daring, structured edge, evolving into a pleasurable, prolonged finish.
Delightful already but will amply reward with a richer experience within the next 3 - 8 years.
