Subtle and refined. Raspberry and sour cherry open, moving into dark red berry fruit. Ginger and nutmeg add spice, and autolytic notes of brioche sit underneath.
On the palate
Dry, with high acidity. A bright, sherbet-like entry leads to a savoury, concentrated dark berry core. Vivid cherry lingers, supported by finely structured brioche and a seamlessly integrated mousse. Nuances of seaweed, citrus peel, lime pith and green almond emerge, and the finish is long and brioche-led.
