On colour
Pale lemon with a light straw cast, clear and bright, with a fine, persistent mousse.
On the nose
Clean and expressive. Citrus blossom and white floral notes lead, with grapefruit alongside, and pomegranate and red cherry add a red-fruit lift. Subtle brioche adds a gentle autolytic note.
On the palate
Dry, with bright, energetic acidity that carries saline notes of seaweed and oyster shell through the mid-palate. The texture is fine and the mousse delicate. The finish is long and persistent, with ripe red fruit and gentle brioche.
On the whole
A precise, saline Cap Classique with red-fruit lift, delicious now and rewarding with short-to-medium ageing.
