Wine Making Method and Maturation:
When making our (60%) Pinot Noir and (40%) Chardonnay Brut Rosé we use the saignée method to achieve the colour. Juice is 'bled off' (saignée) from the press when it has extracted the right level of colour. The base wines are then cool fermented in steel vats to preserve their delicate fruit flavours followed by 72 months bottle ageing on its lees.

On colour
Domaine Des Dieux Rose of Sharon Rosé Cap Classique 2013 pours a delicate, pale salmon-pink with coppery highlights and a fine, persistent bead, reflecting both maturity and elegance. The mousse is soft and creamy, and the limpid colour suggests a gentle, Champagne-style approach to Pinot Noir and Chardonnay rather than heavy extraction.
On the nose
The nose is expressive and charming, with bright notes of strawberry, raspberry and black cherry lifted by hints of redcurrant and rose water. Subtle undertones of brioche, biscuit and creamy pastry from extended lees ageing add depth and sophistication to the vivid red-berry perfume.
On the palate
On the palate the wine is dry, medium-bodied and finely textured, offering a generous rush of strawberry, raspberry and black cherry fruit carried by a delicate, creamy mousse. Fresh acidity and gentle autolytic notes of brioche and biscuit keep the berry richness in check, leading into a clean, long, mouth-watering finish that is both moreish and food-friendly.
On the whole
An elegant, berry-laced rosé Cap Classique, marrying creamy red fruits and rose perfume with fine bubbles, brioche complexity and a refreshing, poised finish.
