Grape Varieties:
100% Pinotage
In the Vineyard:
From hand-selected bunches on unirrigated bush vines. Before harvest, the bunch stems are pinched so the grapes stop drawing juice from the vine and slowly dry and shrivel in the sun. This concentrates their sugar and flavour, in the style of Italy's appassimento wines.
Winemaking Method and Maturation:
The shrivelled grapes are crushed and destalked, then fermented on the skins for about 15 days. Fermentation is stopped early to keep the wine's natural sweetness. The wine is then aged in stainless steel.
