A great combination of site, soils and weather on the belly of the Babylonstoren mountain slopes allow us to ripen the grapes perfectly, retaining wonderful acidities and a gamut of flavours. This is then settled and racked to small French barrels for fermentation and 9 months of aging.
Wine Tasting Notes:
On colour
Domaine Des Dieux Chardonnay 2019 pours a clear, medium lemon-gold in the glass, suggesting some bottle development alongside its coastal freshness. The colour shows good brightness and concentration, pointing to ripe Hemel-en-Aarde fruit and time in oak without heaviness.
On the nose
The nose is refined and layered, opening with lemon curd, ripe yellow apple and pear, joined by hints of peach and subtle tropical tones. Underneath the fruit sit notes of butter, vanilla, toast and a touch of flint and struck match, reflecting barrel fermentation and quality French oak.
On the palate
On the palate the wine is dry, medium to full-bodied and richly textured, with flavours of yellow apple, ripe citrus, peach and a touch of pineapple carried by fresh, cool-climate acidity. Creamy, buttery lees notes, well-integrated oak spice and a gentle nuttiness lend an unctuous, rounded mid-palate, leading into a long, savoury, slightly toasty finish.
On the whole
A focused yet unctuous cool-climate Chardonnay, combining bright citrus and yellow stone fruit with creamy texture, flinty lift and polished oak on a long finish.
