Grape Varieties:
Viognier (85%), Riesling (15%)
Winemaking Method and Maturation:
The grapes were picked by hand from low-yielding vineyards to ensure excellent concentration of fruit. The Viognier comes from the Elgin Valley, where no irrigation and extended hanging time in the vineyard helped achieve superb flavour concentration. Bunches were harvested mid-morning at optimal ripeness, with sugar content between 35° and 40° Balling. Natural weather conditions allowed the development of Botrytis, which lends unique character to the wine.
Due to the raisin-like condition typical of Noble Late grapes, the whole bunches are not crushed but taken to the press for prolonged skin-contact and extraction. The press's draining channels are closed to retain the small amount of juice produced and soak the botrytised grapes for three days, during which the press is rotated morning, midday, and afternoon. After pressing, the juice is naturally cold settled before racking. Fermentation starts in stainless steel tanks before transferring to older barrels to finish the slow fermentation process. The fermentation is completed naturally, as the wine’s high sugar content inhibits the yeast.
