Winemaking Method & Maturation:
Whole bunches were pressed with no skin contact, and only the best free-run juice was selected. The wine was then settled overnight, and then the clean juice was fermented in stainless steel tanks. The juice was settled for twelve hours, and clear juice was transferred to the fermentation tank for the first alcoholic fermentation. After the fermentation, the wine was stored on the lees for six months without any sulphur addition. The wine was then stabilised and filtered before the addition of sugar and yeast for the second fermentation. The second alcoholic fermentation was done in the bottle under a crown cap. The wine was then aged for at least eighteen months on the lees in the bottle. The wine was disgorged and then corked.

On colour
Perdeberg Old Vine Chenin Blanc Cap Classique shows a pale, green‑tinged gold hue with a fine, persistent mousse that forms a delicate collar and steady stream of small bubbles.
On the nose
The nose is pronounced and youthful, with aromas of green pear, Granny Smith apple, lime and grapefruit, supported by hints of honeydew melon and quince and a subtle biscuity, brioche note from time on lees.
On the palate
Dry and lively, this wine has high, crisp acidity and a creamy yet fine mousse, carrying flavours of crunchy green apple, pear and citrus over a fresh, chalky minerality, finishing with a lightly biscuity, lemony autolytic character and good length.
On the whole
A bright, mineral, citrus‑driven Cap Classique with fine mousse and a gently biscuity finish, combining freshness with old‑vine depth.
