Doring Bay is the home location for the Fryer’s Cove Winery. The actual winery is perched on the jetty that juts into the cold South Atlantic Ocean.
The unique winery building is an old Crayfish factory, and our winery, as far as we know is the only winery built on the sea in the world!
Wine Making Method & Maturation:
The season started of with some weather fluctuations which influenced bud break and flowering and causing less and uneven loose bunches with small berries.
Despite the challenges and recovering from the severe drought the wines shows good acidity levels and very nice flavour profiles. Phenolic ripeness occurred at lower sugar levels resulting in lower alcohol wines.
Wine Tasting Notes:
On colour
Fryer’s Cove Doring Bay Sauvignon Blanc 2022 would be expected to show a pale to medium lemon colour with a hint of green at the rim, suggesting youthful freshness and cool-climate fruit. The brightness and clarity in the glass would underline its coastal origin and relatively early bottling.
On the nose
On the nose the wine is likely to be pronounced and intense, with zesty lemon and lime, green apple, underripe pear and grapefruit pith to the fore. Sea spray, crushed shell and subtle green notes of cape gooseberry, nettle and fresh-cut herbs would add a distinctly Atlantic, saline lift.
On the palate
On the palate this should be dry, light to medium-bodied and razor-sharp, with high acidity driving flavours of grapefruit, lime, green apple and gooseberry. A pronounced saline, almost briny edge, hints of wet stone and subtle green herb and capsicum notes would give a long, mouth-watering, distinctly maritime finish.
On the whole
A bright, saline coastal Sauvignon Blanc, combining piercing citrus and gooseberry fruit with crunchy acidity and a vivid, sea-breeze minerality.
