Winemaking Method and Maturation:

Harvest begins early in the season at lower sugar levels to achieve the crisp, natural freshness wanted for exceptional base wine. Grapes are hand-picked in the cool dawn and meticulously sorted. The berries are then placed in small lug boxes for gentle handling and transportation to the cellar.

Only the finest free-run juice is used for fermentation. Upon completion, the tanks are filled and left on the primary lees until blending for extra flavour and texture. The final blend of the base wine is then stabilized and filtered. The sugar levels are adjusted to 24 g/l followed by the addition of the‘liqueur de tirage’ (yeast) for the second bottle fermentation, where all the magic of the bubbles transpire. A minimum of 12 months maturation on the lees in the bottle follows to build extra complexity and character before release.

On colour
Avontuur Brut Cap Classique NV pours a pale gold with a persistent, fine bead—its lively bubbles carrying an instant sense of celebration in the glass. The clarity and delicacy in colour are both refreshing and classic for a bottle-fermented sparkling wine.

On the nose
The bouquet opens with aromas of citrus blossom and lemon cream, entwined with subtle almond notes and a gentle brioche complexity, showing the benefit of extended lees contact. The nose is lifted and bright, giving an impression of freshness and elegance alongside whispers of freshly baked bread.

On the palate
The palate is layered with bright citrus fruit, especially lemon and hints of white peach, while the well-integrated mousse brings a smooth, creamy texture. Extended lees aging adds a rounded richness and a nuanced mineral edge, perfectly balanced by crisp acidity and a seamless, lingering finish.
